To insert an em dash, you need to find that character in the font you've selected. If you really have to, you can use the Tools>Content Editing>Edit Text&Images tool to make some minor modifications. PDF is not a format that lends itself to big editing. The best answer is "You don't" - go back to the original application for all changes and then recreate the PDF file.
